Ingredients:

– 1 (8-ounce) package of reduced-fat cream cheese, softened

– 1 cup whole milk

– 2 tablespoons extra-virgin olive oil

– 1 1/2 cups chopped yellow onion

– 2 tablespoons minced garlic

– 1 (10-ounce) package of frozen spinach, thawed and drained

– 4 cups lower-sodium vegetable broth

– 1 (12-ounce) package of frozen artichoke hearts, thawed and coarsely chopped

– 1/4 cup grated Parmesan cheese, plus more for serving

– 1 tablespoon lemon juice

– 1/2 teaspoon salt

– 1/4 teaspoon pepper

Directions:

1. In a medium bowl, whisk together cream cheese and milk until smooth.

2. Heat olive oil in a large pot over medium heat. Sauté onions until translucent, then add garlic and cook until fragrant.

3. Stir in spinach and continue cooking until warmed through. Add vegetable broth and artichoke hearts, bringing the mixture to a boil.

4. Simmer until the artichokes are tender and the broth slightly thickens.

5. Gradually whisk in the cream cheese mixture, ensuring it melds seamlessly into the soup.

6. Finish by stirring in Parmesan cheese, lemon juice, salt, and pepper until all ingredients are well combined.

Serve this luscious soup in bowls, garnished with additional Parmesan and a sprinkle of black pepper. It pairs wonderfully with whole-grain country bread or crushed pita chips for added texture.
