Mexican chefs urge Americans to expand their culinary understanding, debunking six common misconceptions about Mexican cuisine

When dining at Mexican restaurants in the U.S., many Americans expect baskets of tortilla chips, tacos, burritos, and margaritas at a low cost. However, leading Mexican chefs argue that these assumptions don’t capture the rich diversity of authentic Mexican cuisine, perpetuating misconceptions about the food’s flavours, ingredients, and origins. 

The first myth is that Mexican food primarily revolves around rice and beans. Rick Martinez, the author of *Mi Cocina*, explains that Mexican cuisine is far more diverse. He points out that many Americans associate it with five core dishes—tacos, burritos, enchiladas, nachos, and quesadillas—often accompanied by rice and beans. In reality, Mexican cuisine varies regionally, utilizing local seafood, citrus, and produce that showcase the country’s wide-ranging flavours.

A second misconception is that Mexican food should be cheap. Julian Medina, chef-owner of Toloache in New York City, says this expectation is rooted in the assumption that rice and beans are the core ingredients. However, upscale Mexican cuisine involves high-quality, fresh ingredients and labour-intensive sauces like mole that can take days to prepare.

The third myth involves sour cream and cheese as fundamental components. Mely Martínez, author of *Mexico in Your Kitchen*, clarifies that traditional Mexican cuisine prefers local cheeses like queso fresco and Mexican crema. Medina agrees, explaining that sour cream is an American adaptation, differing in flavour from its Mexican counterpart.

A fourth misconception is that Mexican food is inherently unhealthy. Osiris Hoil, co-founder of District Taco, explains that Mexican food can be balanced and healthy. Rick Martinez adds that Mexico boasts an array of nutritious produce like sweet potatoes, corn, and berries. Hoil attributes the unhealthy perception to adaptations that involve high-calorie toppings and oversized portions.

The fifth myth is that Mexican food is always spicy. Mely Martínez highlights that while chilli peppers are essential to Mexican cooking, they’re used to enhance flavour rather than add heat. Medina confirms this, emphasizing that chilli peppers often add complexity, and not all Mexican dishes are spicy.

Lastly, some believe authentic Mexican food never changes. Rick Martinez explains that migration to Mexico from Lebanon, Haiti, and other countries has naturally influenced its cuisine. Similarly, Mexican-American chefs incorporate local U.S. ingredients, leading to a constantly evolving cuisine that remains authentic in its own right.

These chefs agree that while American interpretations of Mexican cuisine are fine to enjoy, there’s much more to discover by exploring smaller, family-owned restaurants in Mexican neighbourhoods. Here, one can experience the true diversity and richness of Mexican culinary culture.
