Packed with 46g of protein and ready in just five minutes, her Breakfast Egg Quesadilla is becoming a go-to meal for fitness enthusiasts looking for a filling, nutritious start to the day.
Catterson, who shares fitness tips and healthy recipes on social media, introduced her oat-free, high-protein alternative after noticing many people rely heavily on oats for breakfast.

The recipe includes:
- 1 whole egg
- 170g egg whites
- 1 large tortilla
- 30g low-fat grated cheese
- 2 turkey medallions (or bacon)
- Spinach
- 15g salsa
- Seasoning of choice
Catterson starts by cooking the turkey medallions until crisp. She then sprays a pan with oil, adds the egg mixture, seasons it, and places the tortilla on top while the eggs are half-cooked. After flipping the tortilla so the eggs stick, she arranges the ingredients in different sections before folding it into a quesadilla.
With just 445 calories, 34g carbs, and 13g fat, the meal is a powerhouse of nutrition—and Instagram users are loving it.
