Vegan dietitian’s edamame guacamole could be the ultimate longevity-boosting recipe

Melvani, who holds a Master’s in Nutrition from Columbia University and is the author behind Cooking for Peanuts, crafted this recipe with one clear goal: boosting health span and promoting longevity. “Maybe it’s because I’m turning 50 soon, or maybe it’s the food scientist in me,” she said, “but I’m on a mission to create delicious tasting foods that promote long life and vibrant health.”

The centrepiece is her five-minute edamame guacamole, made with creamy avocado, nutty tahini, garlic, and protein-packed edamame. The result is a vibrant, satisfying dip that’s rich in fibre, healthy fats, plant protein, and antioxidants.

She pairs the dip with roasted or steamed purple sweet potato—a colourful root vegetable celebrated for its high levels of anthocyanins, compounds known to support brain function, reduce inflammation, and boost heart health.
