Ingredients: 

– 1 tbsp tamari  

– 1 tsp medium curry powder  

– ¼ tsp ground cumin  

– 1 garlic clove, finely grated  

– 1 tsp clear honey  

– 2 skinless chicken breast fillets (or turkey breast)  

– 1 tbsp crunchy peanut butter (sugar-free and palm oil-free preferred)  

– 1 tbsp sweet chilli sauce  

– 1 tbsp lime juice  

– Sunflower oil, for greasing  

– 2 Little Gem lettuce hearts, cut into wedges  

– ¼ cucumber, halved and sliced  

– 1 banana shallot, halved and thinly sliced  

– Chopped coriander  

– Seeds from ½ pomegranate

Method: 

1. Marinate the Chicken:

In a large dish, mix the tamari, curry powder, cumin, garlic, and honey. Slice the chicken horizontally to make four fillets, then coat them in the marinade. Refrigerate for at least 1 hour or overnight to absorb flavours.

2. Prepare the Sauce:

Mix the peanut butter with the chilli sauce, lime juice, and 1 tbsp of water to create a smooth sauce. Set aside.

3. Cook the Chicken:

Grease a non-stick frying pan with sunflower oil. Cook the marinated chicken for 5-6 minutes on medium heat, covered with a lid. Flip in the last minute of cooking until fully cooked yet moist. Set aside to rest for a few minutes.

4. Assemble the Salad:

While the chicken rests, toss the lettuce, cucumber, shallot, coriander, and pomegranate seeds. Arrange on plates and drizzle with a portion of the satay sauce.

5. Serve:

Slice the chicken, arrange over the salad, and spoon the remaining sauce on top. Enjoy this warm, flavorful meal immediately.
